• Buttercream icing is sweet and fluffy. There is no limit to the flavour that can be added to buttercream, but I do suggest Lemon, Lime or Coconut for rum cake.
• Rolled fondant has a clean, smooth look. It is a sweet icing with a chewy texture. The cake is iced with buttercream first, then fondant is rolled and formed over the cake.
